Ingredients
- 1 1/2 lb (750 ml) small red new potatoes, scrubbed and rinsed with water
- 1 tbsp (15 ml) olive oil
- 4 garlic cloves, minced
- 2 tsp (10 ml) fresh dill, chopped
- 2 tsp (10 ml) fresh rosemary, chopped
- 1 tsp (5 ml) fresh mint, chopped
- Black pepper to taste
Preparation
- In a medium saucepan, cover potatoes with water. Bring to a boil. Simmer for 10 minutes.
- Drain and place potatoes in a large bowl.
- Toss potatoes with remaining ingredients.
- Serve.
