Ingredients

  • 1 1/2 lb (750 ml) small red new potatoes, scrubbed and rinsed with water
  • 1 tbsp (15 ml) olive oil
  • 4 garlic cloves, minced
  • 2 tsp (10 ml) fresh dill, chopped
  • 2 tsp (10 ml) fresh rosemary, chopped
  • 1 tsp (5 ml) fresh mint, chopped
  • Black pepper to taste

Preparation

  1. In a medium saucepan, cover potatoes with water. Bring to a boil. Simmer for 10 minutes.
  2. Drain and place potatoes in a large bowl.
  3. Toss potatoes with remaining ingredients.
  4. Serve.
