Ingredients

  • 10 ml (2 teaspoons) olive oil
  • 1 small onion, chopped
  • 2 garlic cloves, chopped
  • 2 ml (1/2 tsp.) dried thyme
  • 2 ml (1/2 tsp.) dried basil
  • 1 can (398 ml) diced tomatoes, undrained
  • 225 g (1/2 lb) fresh green beans, cut into chunks
  • Salt and pepper to taste
  • Chopped fresh parsley (optional)

Preparation

  1. Heat oil in a skillet over medium heat. Add the onion and garlic and cook for 3 minutes.
  2. Add thyme and basil and cook for a further 1 minute.
  3. Add tomatoes with juice and green beans. Bring to the boil, then reduce heat and simmer for 5 minutes.
  4. Season to taste and garnish with chopped parsley if desired.
