Ingredients
- 10 ml (2 teaspoons) olive oil
- 1 small onion, chopped
- 2 garlic cloves, chopped
- 2 ml (1/2 tsp.) dried thyme
- 2 ml (1/2 tsp.) dried basil
- 1 can (398 ml) diced tomatoes, undrained
- 225 g (1/2 lb) fresh green beans, cut into chunks
- Salt and pepper to taste
- Chopped fresh parsley (optional)
Preparation
- Heat oil in a skillet over medium heat. Add the onion and garlic and cook for 3 minutes.
- Add thyme and basil and cook for a further 1 minute.
- Add tomatoes with juice and green beans. Bring to the boil, then reduce heat and simmer for 5 minutes.
- Season to taste and garnish with chopped parsley if desired.
