Ingredients

  • 1 cup (250 ml) rolled oats
  • ¾ cup (175 ml) milk
  • 1 egg, lightly beaten
  • 3 tbsp (45 ml) vegetable oil
  • 1 ripe banana, mashed
  • 1 cup (250 ml) all-purpose flour
  • 1/3 cup (75 ml) sugar
  • 1 tbsp (15 ml) baking powder
  • ¼ tsp (1 ml) salt
  • ¼ tsp (1 ml) cinnamon

Preparation

  1. Preheat oven to 425°F. In a large bowl, mix milk and rolled oats with a fork.
  2. In another bowl, combine egg, banana and oil. Add to oatmeal mixture.
  3. In another bowl, combine flour, sugar, baking powder, salt and cinnamon. Add to oatmeal mixture and stir lightly with fork until all ingredients are moistened.
  4. Divide batter evenly between greased or lined paper muffin tin. Bake for 15 minutes or until lightly browned.
