Ingredients
- 1 cup (250 ml) rolled oats
- ¾ cup (175 ml) milk
- 1 egg, lightly beaten
- 3 tbsp (45 ml) vegetable oil
- 1 ripe banana, mashed
- 1 cup (250 ml) all-purpose flour
- 1/3 cup (75 ml) sugar
- 1 tbsp (15 ml) baking powder
- ¼ tsp (1 ml) salt
- ¼ tsp (1 ml) cinnamon
Preparation
- Preheat oven to 425°F. In a large bowl, mix milk and rolled oats with a fork.
- In another bowl, combine egg, banana and oil. Add to oatmeal mixture.
- In another bowl, combine flour, sugar, baking powder, salt and cinnamon. Add to oatmeal mixture and stir lightly with fork until all ingredients are moistened.
- Divide batter evenly between greased or lined paper muffin tin. Bake for 15 minutes or until lightly browned.
