Ingredients
- 1 whole-grain tortilla, 7″ (18 cm) in diameter
- 250 ml (1 cup) fresh or frozen vegetables
- 2 beaten eggs or 125 ml (½ cup) Œuf- à-tout™* liquid eggs or egg whites ** liquid egg whites
- 10 ml (2 teaspoons) light mayonnaise (optional)
- Pepper to taste
- 60 ml (¼ cup) grated Swiss or mozzarella cheese, less than 20% fat
- low in cholesterol, ** cholesterol-free
Preparation
- Blanch vegetables in the microwave or on the stovetop
- Meanwhile, in a nonstick skillet, cook the beaten eggs over medium heat, stirring constantly with a wooden spoon until cooked.
- Add the vegetables to the pan and mix with the scrambled eggs.
- Place mixture in center of tortilla, spread with mayonnaise if desired, season with pepper, add cheese and roll up.
- Heat the rolled tortilla in the microwave for 30 seconds to melt the cheese and serve.
