Ingredients

  • 1 whole-grain tortilla, 7″ (18 cm) in diameter
  • 250 ml (1 cup) fresh or frozen vegetables
  • 2 beaten eggs or 125 ml (½ cup) Œuf- à-tout™* liquid eggs or egg whites ** liquid egg whites
  • 10 ml (2 teaspoons) light mayonnaise (optional)
  • Pepper to taste
  • 60 ml (¼ cup) grated Swiss or mozzarella cheese, less than 20% fat
  • low in cholesterol, ** cholesterol-free

Preparation

  1. Blanch vegetables in the microwave or on the stovetop
  2. Meanwhile, in a nonstick skillet, cook the beaten eggs over medium heat, stirring constantly with a wooden spoon until cooked.
  3. Add the vegetables to the pan and mix with the scrambled eggs.
  4. Place mixture in center of tortilla, spread with mayonnaise if desired, season with pepper, add cheese and roll up.
  5. Heat the rolled tortilla in the microwave for 30 seconds to melt the cheese and serve.
