Ingredients
- 2 tsp (10 ml) olive oil
- ¼ cup (60 ml) onion, chopped
- 2 garlic cloves, chopped
- 2 cups (500 ml) fresh green beans, chopped
- ¼ cup (60 ml) low-fat, low-sodium chicken broth
- 1 tomato, chopped
- 1 tbsp (15 ml) fresh oregano, chopped
- 1 tbsp (15 ml) fresh parsley, chopped
- Salt and pepper to taste
Preparation
- Heat the oil in a wok or deep frying pan. Add onions and garlic and cook over medium heat for 3 minutes. Add beans and chicken stock. Cover and simmer for 3 minutes.
- Add tomatoes, oregano, parsley, salt and pepper and cover. Simmer for 1 minute. Serve.
