{"id":27612,"date":"2015-12-17T00:00:00","date_gmt":"2015-12-17T05:00:00","guid":{"rendered":"https:\/\/www.diabete.qc.ca\/en\/diabetes\/diabetes-management\/recipes\/risotto-aux-champignons-epinards-et-fromage-en-grains-a-lail-roti\/"},"modified":"2023-05-29T17:29:24","modified_gmt":"2023-05-29T21:29:24","slug":"mushroom-spinach-and-cheese-curd-risotto-with-roasted-garlic","status":"publish","type":"recipe","link":"https:\/\/www.diabete.qc.ca\/en\/diabetes\/diabetes-management\/recipes\/mushroom-spinach-and-cheese-curd-risotto-with-roasted-garlic\/","title":{"rendered":"Mushroom, spinach and cheese curd risotto with roasted garlic"},"content":{"rendered":"<div class=\" block-background theme-block theme-block--innerblock alignfull bg-color--grey bottom-concave red-sun-left\" >\n\n  <span class=\"theme-block__label\">Section with background<\/span>\n  \n      <div class=\"background-img\">\n      <img decoding=\"async\" src=\"https:\/\/www.diabete.qc.ca\/wp-content\/themes\/diabete.qc.ca\/dist\/images\/block-background\/red-sun-left.svg\" alt=\"\">\n    <\/div>\n  \n  \n    \n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-28f84493 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column has-white-background-color has-background is-layout-flow wp-block-column-is-layout-flow\">\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\n\n\n\n<p><strong>Roasted garlic<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 head garlic<\/li>\n\n\n\n<li>15 ml (1 tablespoon) olive oil<\/li>\n\n\n\n<li>salt and freshly ground pepper<\/li>\n<\/ul>\n\n\n\n<p><strong>Risotto<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>30 ml (2 tablespoons) butter<\/li>\n\n\n\n<li>1 small white onion, chopped<\/li>\n\n\n\n<li>160 ml (2\/3 cup) arborio rice<\/li>\n\n\n\n<li>80 ml (1\/3 cup) white vermouth<\/li>\n\n\n\n<li>1 pinch nutmeg<\/li>\n\n\n\n<li>Ground black pepper<\/li>\n\n\n\n<li>500 ml (2 cups) sodium-reduced chicken broth, hot<\/li>\n\n\n\n<li>45 ml (3 tablespoons) grated Romano cheese<\/li>\n\n\n\n<li>160 ml (2\/3 cup) baby spinach, chopped<\/li>\n\n\n\n<li>10 ml (2 teaspoons) canola oil<\/li>\n\n\n\n<li>80 ml (1\/3 cup) whole button mushrooms<\/li>\n\n\n\n<li>80 ml (1\/3 cup) whole shiitake mushrooms<\/li>\n\n\n\n<li>50 g (1 1\/2 oz.) cheese curds<\/li>\n\n\n\n<li>30 ml (2 tbsp.) chives, snipped<\/li>\n<\/ul>\n<\/div>\n\n\n\n<div class=\"wp-block-column has-grey-300-background-color has-background is-layout-flow wp-block-column-is-layout-flow\">\n<h2 class=\"wp-block-heading\">Preparation<\/h2>\n\n\n\n<p><strong>Roasted garlic<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Preheat oven to 180\u00b0C (350\u00b0F).<\/li>\n\n\n\n<li>Cut off top of garlic head to expose bulbs. Place on aluminum foil. Pour in olive oil and season. Close foil. Bake for 1 hour or until softened.<\/li>\n\n\n\n<li>Mashed potato bulbs to a pur\u00e9e.<\/li>\n\n\n\n<li>Set aside for later use.<\/li>\n<\/ol>\n\n\n\n<p><strong>Risotto<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>In a large saucepan, heat the butter and sweat the onion. Add rice and brown.<\/li>\n\n\n\n<li>Deglaze with white vermouth. Add nutmeg and pepper.<\/li>\n\n\n\n<li>Ladle the broth into the rice, one at a time. Stir constantly to release the rice starch until a creamy consistency is obtained. Remove from heat and stir in Romano cheese, baby spinach and 5 ml (1 tsp.) roasted garlic pur\u00e9e.<\/li>\n\n\n\n<li>Heat oil in a large skillet over high heat and saut\u00e9 mushrooms until golden.<\/li>\n\n\n\n<li>Add saut\u00e9ed mushrooms and cheese curds to risotto. Mix well. Divide between 4 soup plates and garnish with chives.
